Basmati Rice – 2 cup
Onion – 3 ( sliced thin)
Cinnamon – 3 piece
Cardamom – 2
Cloves – 4
Crushed pepper – 3
Jathipathri (mace) – one small piece
Thakkolam ( star anise) – 1
Curry leaves – 1
Cashew nut – 50 gram
Kismis – 50 gram
Ginger ( cut into small pieces) – 3 spoon
Garlic ( cut into small pieces ) – 2 spoon
Ghee – 4 table spoon

Method of preparation

Wash and soak the rice for one hour. Then drain the rice and keep it aside. Heat ghee in a pan . fry cashew , kismis and keep it aside. Then fry half of onion in the ghee , drain and reserve. Then in the remaining ghee fry the ginger, garlic for a while and then add the remaining onion. And fry till it becomes soft. Then fry the masala in the ghee. Add the drained rice and fry in medium heat till the water gets drained completely. Stir it continuously. Now add 3 cup of water and required salt and cook it by covering the pan with a tight lid and cook until the rice is done and all the water is absorbed. Now transfer this cooked rice in to a different vessel and add the fried onion, cashew nut, kismis, and mix well and can serve this rice along with non veg curry .
