
Ingredients
Milk – ½ liter
Maida – 2 tea spoon
Sugar – 1 cup
Water – 1 cup
Rose Essence – 2 – 3 drops , if not Cardamom one pinch
Add ¼ Tea spoon of Citric Acid In 2 to 3 table spoon of Lemon to make a solution
Method of preparation
Boil the milk in a vessel. Add the above mentioned solution into it and mix until the milk get curdles. Mix it slowly so that the whey completely get separated into cheese and Water. Wash the cheese with fresh water . After that drain off the water completely from the cheese by wrapping it in a cheese cloth. Bring the edges of the cloth up and tie it together. (Squeeze the excess water ) The alternative name of the cheese is chhena or Panner . Knead or mash the chhena to make a smooth pliable. Kneading the chhena is very important. Then Add the maida flour and knead to become a smooth dough. Divide the dough into six or seven equal small portions and shape each portion into a smooth round ball. Take the sugar and water in a vessel and boil it to make the sugar syrup and keep the stove into medium flame. Then put the chhena balls ( the cheese balls) into the syrup carefully and half cover the lid and cook it for 15 minutes. Once the balls get puffed up remove the same from the stove and allow it cool for some time. Then add the rose essence and refrigerate it and serve chilled.
