Ingredients

Atta / Maida – 1 1/3 cup
Baking Soda – 1 tea spoon
Cumin seed – ½ tea spoon
Salt – one pinch
Egg – 1 nos
Vegetable oil – ¼ cup
Curd – ½ cup
Sugar – ½ cup
Carrot – 2 tea spoon
Mango – 2 tea spoon
Dried grapes – 2 tea spoon
Chocolate pieces

Method of preparation

Take ¼ cup of vegetable oil in a bowl and add the beaten egg into the oil. ( Beat the egg by using the electric beater) Add ½ cup sugar , curd into it and beat well by using the beater. Combine the atta , baking soda , salt cumin seed, and carrot and add into the beaten egg and mix well to become batter . Arrange the muffin pan or paper muffin liners in a tray . Gently pour the batter into the muffin liner using ice cream scoop. Fill each liner only by three forth

Before you bake the muffin Pre heat the oven for 10 minutes at 200° Celsius. After that keep the filled muffin liners in the pre- heated oven and set the oven at 180° Celsius. For 25 minutes and bake it.

You can also make the muffin with Mango, Chocolate, dried grapes . All the muffins flavors can be prepared in the same manner of carrot muffin. We can also use Maida in the same measure instead of Atta. Instead of Carrot , you can take the required flavors in the same measure . that is the only difference. When you make mango flavor, grind the mango and mix. When you want to make chocolate muffin, you can place a piece of chocolate in the middle of the batter. When you want to make the dried grape muffin , you can mix the dried grapes in the batter.
