Ellunda - Adukkala



Sesame seeds (ellu) – 500 gram
Jaggery – 250 grams
Cardamom – 1 tsp


Dry the sesame seeds under the sun rays for some time. After that roast the sesame seeds in a dry pan over medium heat. Stir continuously, and roast until they start to burst. Remove and spread them on a large plate. In another heavy vessel, make syrup out of jaggery, by heating it, and cook over medium heat to make a thick syrup. Add the toasted sesame seeds to the syrup, and stir well. Let it cool down a little. When the temperature cools down to a state where the hand can withstand the heat, grease a little ghee on the palm of your hand, pick up a handful of the mixture and make small even sized balls using the hand. Repeat with the remaining mixture.
