Curd Rice - Adukkala

Curd Rice


Basmati rice – 1 cup
Curd (should not taste sour) – 1 cup as required
Ginger- ½ tsp (cut into very small pieces)
Green chillies – 1 (cut into two)
Shallots – 4 no’s
Mustard seed – 1 spoon
Curry leaves – 2 strip
Dry Chillies – 2 nos
Coconut oil – 1 tsp
Salt – to taste


Cook the rice with required sugar and drain the water. (If the rice get over cooked it would be good) Once the rice get cool, pour the curd into the rice and mix well. Take Tawa, Heat some Oil add mustard seeds, shallots, green chillies, dry chillies curry leaves, ginger and fry well. Add this fried mix into rice and mix well. This rice can be served with any curry, Piickle, pappadam etc.
