Ingredients

Coconut oil – 4 teaspoon
Potato – 250 gm (Large pieces)
Turmeric powder – 1 teaspoon
Carrot – 250 gm (Large pieces)
Eggplant(Vazhuthananga) – 250 gm
Green Chilly – 5
Onion – 1 (Large pieces)
Tomato – 1 (Large pieces)
Mustard seed – 2 teaspoon
Black pepper – 2 teaspoon
Corn flour – 2 teaspoon

Method

Cook the potato, eggplant, onion, carrot, tomato and turmeric powder together. In another pan, heat the oil and break mustard in it. Add curry leaves and the cooked vegetables. Add salt and the corn flour dissolved in two teaspoon full water. Add the green chilly. Cook for some time and it is ready
