Brinjal – 250gm
Salt – 1 tbsp
Gingely oil – 1/2 cup
Chopped ginger – 1 tbsp
Chopped Garlic – 10
Green chilly – 2
Fenugreek tbsp
Mustard – 1 tbsp
Chilly powder – 1 tbsp
Turmeric powder – 1/2 tbsp
Pepper powder – 1 tbsp
Cumin powder – 1 tbsp
VInegar – 1 cup
Sugar – 1 tbsp

Marinate the brinjal pieces with salt and keep it for an hour. Remove the water from the brinjal with a towel. Add gingely oil in a pan and heat. Add the brinjal pieces to this. When it turns brown, take it off. Splutter fenugreek in this oil. Add ginger and garlic to this and saute well. Add grinded mustard to this and heat well. Add green chilly, pepper powder, chilly powder turmeric powder and jeera powder and heat well again . Add vinegar, sugar and brinjal pieces and cook well. Take off from stove and allow to coll. Later transfer to an air tight container.
