Brinjal – 2 big
Cumin seed – 1 tea spoon
Ginger – 1 piece
Turmeric powder – ½ tea spoon
Tomato – 2 big ( peel off the skin and chopped)
Panch Phoran ( a blend of five spices)
( fennel seeds, cumin seed, mustard seed, fenugreek, aniseed ( karinjeerakam) with equal measures and powdered).

Oil – to fry
Bay leaf – 2
Garlic – 4 cloves
Sugar – ¼ tea spoon
Coriander leaves – little
Salt – as required
Chilly powder – 1 tea spoon

Method of preparation

Grind the cumin seed and ginger into paste. Heat 3 table spoon of oil in a frying pan and add the panch phoran, garlic, bay leaf into it and fry. Then add the brinjal pieces into it and fry, also add the other ingredients into it and cook. Finally add the coriander leaves.
