Ingredients

Brinjal Big – 1
Onion – 1
Tomato – 1
Garlic – 8
Ginger paste – 1 tea spoon
Green chilly – 3
Cumin powder – 1 tea spoon
Turmeric powder – ½ tea spoon
Chilly powder – ½ tea spoon
Garam masala powder – ½ tea spoon

Method of preparation

Clean the coriander leaves and brinjal thoroughly and wipe out the water particles completely. Then make a mark on the brinjal using the knife. Then grease some oil on the brinjal. Light the gas stove and keep the brinjal above the flames and roast for some time. Have to roast all the sides on a medium flame till the brinjal gets well cooked and the skin has charred completely. Allow it to get cooled for some time. Then peel off the skin . ( if you put the roasted brinjal in cold water you can easily remove the skin) . After peeling the skin mash the brinjal with your hand. Heat oil in a pan . and fry the onions till it becomes golden brown colour. Later add the ginger garlic paste , masala powder and salt and fry. Add the tomatoes and fry till the masala is cooked and the oil rises to the surface. Then add the mashed brinjal and mix well. Lower the heat and cook for some time. Add the chopped coriander leaves and mix well. Serve hot
