1.Raw mango Peeled off the skin and cut into thin pieces – 1 kilo
2.Salt (kalluppu) – 2 table spoon
3.Gingerly oil – ½ cup
4.Ginger – cut with one inch thickness – 1 piece
5.Garlic – cut into thin pieces – 6
6.Curry leaves – as required
7.Chilly powder – ¼ cup
8.Turmeric powder – 1 spoon
9.Hing – 1 tea spoon
10.Jaggery – ¼ cup

Method of preparation

Take the cut mango pieces and marinate with salt. Keep it aside for one day. The next day dry the mango in the sun. Let it dry for one week in the sun so that the moisture will totally go away from it.
Take a thick bottom pan and heat oil. Add ginger , garlic , curry leaves and fry. Reduce the flame and add chilly powder, turmeric powder , hing and keep it in the flames till it get warm. Later add the dried mango pieces and jaggery. Stir it continuously till the ingredients get mix with the mango pieces. if necessary add the salt. Ada manga achar is ready
