1. Spinach (cheerayila) finely chopped – 1 cup
2. Potato – 3 nos
3. Chilly powder – ¼ tsp
4. Onion – 1 no
5. Salt – as required
6. Ginger finely chopped – ¼ tsp
7. Oil – For frying
8. Bread crumbs – As required
9. Egg – As required

Preparation Method

Clean the Spinach and squeeze out the water completely. Then chop the spinach finely and measure and take one cup. Then chop the onions. Heat the oil in a pan and ad the onions, ginger and chilly powder and sauté well. When the onions get slightly brown add the mashed boiled potato and sauté in a reduced flame. Add the spinach, salt needed and mix well. Make sure that the spinach is not getting over cooked.

Take a portion of the mixture almost lemon size and make the shape as per your wish Dip the cutlet in the beaten egg and roll it on the bread crumbs and see it that it is well coated with bread crumbs on both side Place it in the pan. Shallow fry till both the sides gets golden. Cutlet is ready.
