Broken wheat – ¼ kg
Jaggery – ½ kg
Coconut – 2nos
Ghee – 3 tablespoon
Cardamom powder 1-2 spoon
Coconut pieces, cashew, raisins – To fry and Garnish

Preparation Method
Scrap coconut and take out the extract first ,second, third milk and keep it aside. In a heavy bottom vessel, boil the jaggery into a syrup. Clean the broken wheat, add water and boil it till it get cooked. When it starts thickening add jaggery syrup. Stir it properly and add 2 tbs ghee , Mix well till it absorbs the syrup well and forms a thick consistency. On a low flame add the 2nd extract of coconut milk, mix well and cook. When it starts thickening, add the 1st extract of coconut milk. The payasam should not get boiled once you add the 1st extract of coconut milk. On getting heated l remove it from flame. . Garnish it with coconut pieces, cashew, and raisins fried in ghee. Payasam is ready to serve.
