Ingredients
1. Cleaned kaada – 6
2. Lemon juice – 1 table spoon
3. Chilly powder – 1 table spoon
4. Turmeric powder – ¼ tea spoon
5. Ginger garlic paste – 1 tea spoon
Mix the ingredients from two to five and marinate it in the kada pieces and keep it aside.

6. Egg pieces – 1 cup
7. Potato boiled and smashed – 1 cup
8. Onion – chopped small – 1 cup
9. Carrot chopped small – ¼ cup
10. Celery chopped – ¼ cup
11. Tomato cut into small pieces – ¼ cup
12. Green chilly chopped – 1 table spoon
13. Garam masala – 1 tea spoon
14. Vegetable oil, salt – as required

Method of preparation

Heat a vessel add little oil and add the onion and saute. Add the ingredients from ten to fourteen into it and saute. Then add the smashed potato, egg pieces into it and mix. Then stuff the mix in the kaada pieces. Then take the egg white , add a pinch of salt , add little maida into it and knead it to become a dough. Put this dough in the open side of the kaada and seal properly. Take a big kadai and pour oil. Then deep fry the kaada pieces into it. have to be careful that the sealed part is not getting opened.

Now we can prepare masala with kaada

Ingredients

1. Onion – cut long- 2 cup
2. Ginger , garlic crushed – 1 table spoon
3. Green chilly crushed – 1 table spoon
4. Tomato chopped – 1 cup
5. Kaskas paste – 1 table spoon
6. Cashew nut paste – 1 table spoon
7. Garam masala powder – 1 tea spoon
8. Curd – ½ cup
9. Coriander , pudina (mint) leaves chopped – ½ cup
10. Vegetable oil, salt – as required

Take the oil which you fried kaada and add onion into it and saute. Later add crushed ginger , garlic, and green chilly and tomato pieces and saute. Add kaskas, cashewnut, garam masala, curd, coriander and pudina leaves into it and mix. Mix everything properly and the add the stuffed kaada into it and mix. Then remove it from the stove. stuffed kaada masala is ready. Now we can prepare Biriyani.

Ingredients required for biriyani

1. Good quality kaima rice – 2 cup – cleaned and drained out the water completely.
2. Boiled water – 4 cup
3. Onion – chopped small – ¾ cup
4. Cashew nut slit – 10
5. Kismis – 1 table spoon
6. Cinnamon ( ¾ inch piece) – 3
7. Cloves – 6
8. Cardamom – 4
9. Biriyani masala powder – ½ tea spoon
10. Ghee – as required

Heat ghee in a vessel. Add onion in to it and fry it till it become golden colour and keep it aside. Then fry the cashew nut and kismis and keep it aside. Then in the remaining ghee, add the ingredients from six to eight and saute. If required you can add ghee . then add the rice and saute for sometime. Then add four cup of boiled water and biriyani masala and mix. Close the lid and cook. In between you have to stir it so that it is not getting burned at bottom.

In order to set the biriyani, take a vessel. First spread the rice in it . then spread the kada masala on top of it . then add little ghee, curd, chopped leaves, cashew nut, kismis on top of it . then again spread the rice, then kaada masala , then curd chopped leaves, cashew nut, kismis . repeat the process till the rice, mix and masala gets over. Then close the lid and set it in either by using microwave or place the vessel on the hot dosa pan and steam it for ten minutes.
