Chicken – 8 big pieces
Basmati rice – 1 kilo ( soaked for 45 minutes in water)
Carrot – 2 cup ( cut into thin pieces)
Onion – 2 cup ( cut into thin pieces)
Tomato – 2 cup ( cut into thin pieces)
Tomato puree – 1 table spoon
Ginger – ½ spoon
Pepper powder – ½ table spoon
Orange skin powdered – ½ table spoon
Cardamom powder – ½ table spoon
Cinnamon powder – ½ tea spoon
Cloves powder – ¼ tea spoon
Dried lemon – 1
Vegetable oil – as required
Salt –as required

To decorate cubsa
Badam ( almonds) – ¼ cup ( cut into two pieces)
Raisins – ¼ cup

Method of preparation

Take a thick bottom pan. Pour required oil and sauté the onion. Add ginger into it. when the onion gets brown colour add the chicken pieces.
Cook it till it becomes brown colour. Add orange skin powder, pepper powder, cardamom powder, cinnamon powder, cloves powder, tomato puree, chopped tomato, dried lemon, required salt and mix it thoroughly.

When the oil gets separated add three cups of water. Close the lid and cook it for twenty five minutes till the chicken gets cooked. When it gets cooked as required transfer the cooked chicken into separate container which keeps the chicken warm. Then in the same vessel add the soaked rice, carrot and cook it for twenty five minutes by closing the lid.
At the same time take another pan and pour little oil. Then fry the almonds and raisins in it and keep it separate. Take a vessel, spread the cooked rice . on top of it spread the cooked chicken pieces. Again on top of it add the fried almonds and raisins and decorate. Can serve.
