Bonda - Adukkala



Potatoes Aloo – 1 kg
Onion – ½ Kg
Green chillies – 20 nos
Dry Chillies – 4 nos
Ginger – 4 pcs
Shallots (Chuvanna Ulli) – ¼ kg
Curry leaves – 8 leaves
Gram Flour 1 Kilo
Salt – to taste
Mustard seed – 1 spoon
Urud dal – 1 spoon
Coconut oil – 1 Kg. ( for frying)


Peal off the outer skin of the Potato, and along with Onion cook the same and keep it separate. Chop shallots, Green chillies, Curry leaves, and ginger into very thin pieces. Keep the kadai in the stove and pour 4 spoon of cocunt oil into it. Put the dry Chilli (cut into 4 pcs) , Urud dal and mustard sees into the oil . Then add the chopped shallots, green chillies, curry leaves ginger into it and sauté. Once you start getting light brownish colour, add the boiled potato and onion into it and mix well .Once it get fried take out the mix and keep separate. Once it get cooled make small lemon size balls out of it. In a bowl take a cup of gram flour; add turmeric powder, little salt and chili powder to it. Add little water bit by bit and mixing with hand make a batter (neither too thick nor loose ) Dip each ball in the batter and deep fry them till golden brown.
