Vellayappam

Ingredients:

Raw rice – ½ kg.
Boiled rice (cooked) – 6 table spoons
Baking powder – ½ tea spoon
Grated coconut – Half a coconut
Yeast – ½ tea spoon
Sugar – 4 tea spoons
Salt – As needed

Preparation

Soak the raw rice in water for about 3 – 4 hours. Now take it and mix with coconut and rice and grind well. Put the yeast in a glass and add a teaspoon full of sugar and a small quantity of lukewarm water. Stir it well and leave for some time. When the yeast mixture bulges up add it to the ground rice and mix thoroughly. Leave it like that for 8 – 10 hrs. One hour before making the ‘Appam’ add the sugar and baking powder and mix well. Now you can pour it in small quantities into a heated frying pan dabbed with a few drops of coconut oil. Spread it evenly over the pan using a ladle into a round shape. Close it with a saucer-like thing and roast it in low flame. That’s all!!
