Ingredients for Indri Appam :

Rice powder (Roasted) – 1 kg
Coconut – 1
Uzhunnu Parippu – 1/4 kg
Jeera – 2 tbsp
Shallot – 7
Garlic – 10
Salt – as needed

Add grated coconut to the roasted rice powder. Grind well shallot, jeera, uzhunnu parippu and garlic together and add to the rice powder. Add some water and make a batter like that for chappathi. Heat slightly a banana leaf and tear it. Place a ball of dough onto the leaf and make a sheet of it. Fold the leaf and then steam it. Prepare appam with the rest of the dough in the same way.

Ingredients for the milk:
Coconut milk – of a coconut
Rice powder – 2 tbsp
Jaggery – 100 gm
Jeera powder – 1 tbsp
Cardamom – 5
Salt – as needed

In the second and third coconut milk, add rice powder, jaggery, jeera powder, cardamom and salt and heat well until it attains a thick consistency. Add the first milk of the coconut and add to this now. Serve the appam with the milk. Appam should be taken by dipping in the milk.
