
Ingredients
Bitter gourd – cut into very thin slices in semi circle – 12nos
Salt – 2 tea spoon
Gingerly oil – 2 table spoon
Mustard seed – 1 tea spoon
Ginger – cut into very small pcs – 1 tea spoon
Garlic – sliced – 6 cloves
Curry leaves – 8
Vinegar – 1 cup
Turmeric powder – ½ tea spoon
Method of Preparation
Add salt to the cut bitter gourd and keep it aside for three hours to reduce the bitter taste. After three hours squeeze out the water particles completely from the bitter gourd. Then keep it one by one in a tray to drain out the water completely. Heat oil in a pan and splutter the mustard seed. Add ginger, garlic, green chilly, curry leaves and roast well. Then add the bitter gourd and also roast for some time. Add Vinegar the remaining salt and turmeric powder and cook the bitter gourd till it becomes soft. Then remove it from the stove and allow it to cool. On getting cooled you can stuff it in bottle and preserve.
